Grilled Chicken Tacos with Spiced Mayo and Avocado
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and black pepper to taste
- 4 small tortillas
- 1 ripe avocado, sliced
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- 1 clove garlic, minced
Instructions:
Preheat your grill to medium-high heat
In a small bowl, mix together the olive oil, ground cumin, paprika, salt, and black pepper
Brush the chicken breasts with the spice mixture on both sides
Grill the chicken breasts for about 6-7 minutes per side, or until they are cooked through and have nice grill marks
Remove from the grill and let them rest for a few minutes before slicing them into strips
While the chicken is grilling, warm the tortillas on the grill for about 30 seconds per side or until they are slightly charred and pliable
In a separate small bowl, prepare the spiced mayo by mixing together the mayonnaise, chili powder, lime juice, and minced garlic
To assemble the tacos, spread a generous spoonful of the spiced mayo on each warm tortilla
Add a few slices of grilled chicken on top of the mayo
Top with sliced avocado, shredded lettuce, diced tomatoes, diced red onion, and chopped fresh cilantro
