One Pot Cheesy Chicken Pasta
A creamy, comforting one-pot dish with tender chicken, pasta, and lots of cheese in a tasty broth. Great for a quick dinner during the week
Ingredients:
- 1 lb chicken breast, diced
- 2 cups pasta such as penne or rotini
- 2 cups chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the chicken breast pieces and cook until they turn brown
Put in the minced garlic and diced onion
Cook until the onion turns clear
Mix in the milk, Italian seasoning, salt, and pepper, along with the pasta and chicken broth
Bring to a boil, then lower the heat and let it simmer for about 15 minutes, stirring every now and then, until the pasta is done and the liquid is gone
Add grated Parmesan and cheddar cheese to the cooked pasta and stir until the cheese melts and becomes creamy
If you need to, change the seasoning
Serve hot, and if you want, top with more grated Parmesan cheese
