Double Chocolate Chip Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt
In another bowl, beat the eggs and then add buttermilk, vegetable oil, and vanilla extract
Mix until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; its okay if there are a few lumps
Fold in the semi-sweet and white chocolate chips into the batter
Divide the batter evenly among the muffin cups, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs
Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
