Grandmas Lentil Soup

This recipe for hearty lentil soup, passed down from grandmother, is great for cold days.

Ingredients:

  • 1 cup lentils
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Rinse lentils under cold water and drain

In a slow cooker, combine lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper

Drizzle olive oil over the top

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until lentils and vegetables are tender

Taste and adjust seasoning if needed before serving
