Peanut Butter Dipped Chocolate Sorbet Popsicles
Ingredients:
- 2 cups unsweetened almond milk
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup smooth peanut butter
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup dark chocolate chips
Instructions:
Over medium heat, mix the peanut butter, vanilla extract, sugar, cocoa powder, and salt in a saucepan with a whisk until the mixture is smooth and well mixed
Take it off the heat and let it cool down all the way
Put the sticks into the popsicle molds and pour the mixture into them
Freeze until solid, which should take about 4 to 6 hours or overnight
In 30-second bursts, stir the dark chocolate chips in a bowl that can go in the microwave until the mixture is smooth
After the popsicles are frozen, dip each one in the melted chocolate and let the extra chocolate drip off
Place the dipped popsicles on a baking sheet lined with parchment paper
Put the pan back in the freezer for 10 to 15 minutes, or until the chocolate sets
