Cheesy Bacon Cupcakes
Ingredients:
- 6 slices bacon
- 6 large eggs
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh chives for garnish optional
Instructions:
Preheat your oven to 375F 190C
Cook the bacon in a skillet over medium heat until crispy
Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease
Once cooled, crumble the bacon into small pieces
In a mixing bowl, beat the eggs until well combined
Stir in the shredded cheddar cheese and crumbled bacon
Season with salt and pepper to taste
Grease a muffin tin with cooking spray or line with silicone cupcake liners
Divide the egg mixture evenly among the muffin cups
Bake in the preheated oven for 15-18 minutes, or until the eggs are set and the tops are lightly golden brown
Remove the cupcakes from the oven and allow them to cool slightly before serving
Garnish with fresh chives, if desired
