Coconut Angel Food Cupcakes
Ingredients:
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 cup coconut flakes
- 1/4 teaspoon salt
- 12 large egg whites
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, sift together half of the sugar, all-purpose flour, coconut flakes, and salt
Set aside
In a separate bowl, beat the egg whites with an electric mixer until they become foamy
Add cream of tartar and continue beating until soft peaks form
Gradually add the remaining sugar, beating continuously until stiff peaks form and the mixture becomes glossy
Gently fold in the sifted dry ingredients in three parts, being careful not to deflate the egg white mixture
Add vanilla extract and coconut extract, gently folding until fully combined
Spoon the batter into cupcake liners, filling each about 3/4 full
Bake in the preheated oven for 18-20 minutes or until the cupcakes are lightly golden and a toothpick inserted into the center comes out clean
Remove from the oven and let cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely
Once cooled, you can optionally frost or garnish with whipped cream, shredded coconut, or your favorite topping
