Shrimp Arugula Salad

This shrimp and arugula salad is very cool and full of tasty ingredients. The peppery arugula, creamy white beans, and juicy cherry tomatoes taste even better with grilled shrimp on top of them. Something as simple as olive oil and lemon juice brings the whole meal together, making it light and filling.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 4 cups arugula
  • 1 can white beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions:

Warm the grill up to a medium-high level

Mix shrimp with lemon juice, salt, pepper, and 1 tablespoon of olive oil in a bowl

Grill the shrimp for two to three minutes on each side, or until they are fully cooked

Put arugula, white beans, and cherry tomatoes in a large salad bowl

On top of the salad, put grilled shrimp

Pour the rest of the olive oil over the salad

If you think it needs it, add more salt and pepper

Carefully toss to mix

Serve right away and enjoy
