Slow Cooker Red Beans and Rice
Warm and comforting, this Slow Cooker Red Beans and Rice recipe is a Southern classic. Let the slow cooker do the work, and savor the rich flavors of red beans, smoked sausage, and aromatic spices over a bed of fluffy white rice.
Ingredients:
- 1 lb dried red beans, rinsed and sorted
- 1 lb smoked sausage, sliced
- 1 large onion, finely chopped
- 1 bell pepper, finely chopped
- 3 celery stalks, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- 4 cups cooked white rice
- Green onions, chopped for garnish
Instructions:
In a slow cooker, put onion, bell pepper, celery, garlic, smoked sausage, red beans, and beans
Put in the chicken broth, oregano, paprika, salt, black pepper, cayenne pepper, and thyme
Use a stir to mix
On low, cover and cook for 7 to 8 hours, or until beans are soft
To make the sauce thicker, mash some of the beans against the side of the slow cooker
Put the red beans on top of white rice that has been cooked
Add chopped green onions on top, and then enjoy your tasty Slow Cooker Red Beans and Rice
