Tomato Bisque with Butter

This tomato bisque is thick, creamy, and full of flavor. Adding butter to the soup makes it taste extra rich, which makes it the perfect comfort food for a cold day.

Ingredients:

  • 1 tbsp butter
  • 1 can 28 oz crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Melt the butter in a big pot over medium-low heat

Put in the minced garlic and chopped onion

Saut until the onions are soft

Mix the tomato paste and vegetable broth together

Bring to a low boil

Add pepper, sugar, and salt to taste

Turn down the heat and let it cook slowly for 20 minutes

Add the heavy cream and mix it in well

Blend the soup until its smooth with an immersion blender

Let it cook for five more minutes

Add fresh basil leaves on top and serve hot
