Watercress Salad with Green Apple Vinaigrette - Spoon Fork Bacon
This Watercress Salad with Green Apple Vinaigrette is a tasty and refreshing salad that has the crunch of green apples and the peppery taste of watercress. The homemade vinaigrette gives the dish a great tangy sweetness that makes it a great side dish or light meal.
Ingredients:
- 4 cups watercress, stems removed
- 1 green apple, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup candied pecans, roughly chopped
- 1/4 cup crumbled blue cheese
- For the Green Apple Vinaigrette:
- 1/4 cup green apple, finely grated
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Watercress, sliced green apple, red onion, candied pecans, and crumbled blue cheese should all be put in a large bowl
