Curry Hummus Detox Sandwiches
These Curry Hummus Detox Sandwiches are a healthy and flavorful option for a quick meal. Packed with chickpea goodness and a hint of curry, they are perfect for a detox or as a light and satisfying lunch.
Ingredients:
- 1 cup chickpeas cooked and drained
- 2 tablespoons tahini
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon curry powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Juice of 1 lemon
- Salt and pepper to taste
- 4 whole grain sandwich buns
- 1 cucumber sliced
- 1 red bell pepper sliced
- 1 carrot grated
- 1 cup spinach leaves
- Alfalfa sprouts for garnish
Instructions:
Put the chickpeas, tahini, garlic that has been minced, olive oil, curry powder, cumin, paprika, and lemon juice in a food processor
Mix until its smooth
Mix in salt and pepper to suit your taste
If you need to, change the seasoning
Spread a lot of the curry hummus on each half of the whole grain sandwich buns after cutting them in half
On the bottom half of the buns, put the shredded carrot, red bell pepper, spinach leaves, and sliced cucumber
As a garnish, put alfalfa sprouts on top
Put the top bun halves on top of the sandwiches to make a full sandwich
