Easy Pumpkin Masala
This Easy Pumpkin Masala is a flavorful vegan dish made with tender pumpkin cooked in aromatic Indian spices. Its a perfect dish for a quick and nutritious weeknight dinner.
Ingredients:
- 500g pumpkin, diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
Set a pan on medium heat and add oil
Put in the cumin seeds and let them pop
Add green chili, garlic, ginger, and onion that has been chopped
Cook the onions until they become clear
Put in the chopped tomatoes and cook them until they get soft
Add the salt, turmeric powder, red chili powder, and ground coriander and mix them in
Mix well
When you add the diced pumpkin, mix it in so that the spices cover it well
Cover and cook, stirring every now and then, for 15 to 20 minutes, or until the pumpkin is soft
Add the garam masala to the cooked pumpkin masala and mix it well
Add fresh coriander leaves as a garnish
Warm it up and serve it with bread or rice
